How to backup files (not the site) on Microsoft SharePoint Server 2007?

Specifically I want to be able to save the documents in SharePoint to a flash drive daily without having to do it manually. I know that I could write a program that would do it in a brute force way (or if someone knows of a script that could be modified to do it) but I was curious if there were other options. Note that I DO NOT want to back up the entire site (i.e. I do not want to end up with a single .cmp file. I want to have all of the files easily accessable on the flash drive as if I had originally saved them to the flash drive so I could just stick it into any old computer and open the files in their original format such as .doc or .ppt) Any input on this would be great!
